"Merkel Pie"

Merkel Pie

My recipe is based on one found in Foxfire 2.

Their recipe is much simpler, only using bacon, mashed potatoes and fresh morels.

I added the other ingredients because that is what I tend to do. Onion, cream, cheese all make for fine additions and you can alter it to suit your taste. I added a couple eggs to firm up the slices. The first time I made the pie I used fresh ramps but green onions are just as nice.

The pictures display the ingredients and the preparation.

Basically lay the chopped up bacon on the bottom of the pan, add onions and morels then cover with mashed potatoes mixed with cream, butter, cheese and finely chopped morels. Seasoned to your taste.

I put the pie in the oven at 350 degrees for 30 minutes and then topped it with chopped green onions and cheese and then back in the oven for another 15 minutes or so. It is done when you can insert a knife blade and it comes out clean.

Merkel is a common name used for Morels from the Southern Appalachians. Its origins are enhanced by story of a young starving woman finding them as manna, a miracle... with the old mountain dialect becoming Merkel.
