"Sautéed Chanterelles"

Chanterelles are one of the most popular wild mushrooms to eat. There are hundreds of great recipes for them. This one is a simple but tasty appetizer dish that I think you will enjoy. Ingredients:

1-2 Pounds Fresh Chanterelles, (White Chantis will also work)

3/4 stick of Butter, (Goat Butter is awesome!)

1/3 cup Olive Oil

1 Clove Fresh Garlic

3 Tablespoons of Fresh Parsley

3-4 Tablespoons of Red Onion

1 Tablespoon Fresh Cilantro

Salt & Pepper to your liking

 

Wash them gently, removing all dirt and debris. Cut end of stems off as well. Remove any spoiled or questionable mushrooms. If you have some large specimens, slice them into smaller portions.

Place the washed mushrooms in a bowl or on a plate.

Chop Parsley, Red Onions, Garlic Clove, and Cilantro.

Melt Butter in the microwave. Pour in Butter and Olive Oil into a non-stick pan and turn on burner to medium-high.

Add Chanterelles to pan. Sautee mushrooms for 8-10 minutes.

Add chopped Onions, Parsley, Cilantro, and Garlic and continue cooking for another 3-4 minutes. Add Salt and Pepper now also.

Remove from heat, serve and enjoy!
