"Scrambled Eggs With Chanterelles"
By: Chris Matherly

Chanterelles are one of the most popular wild mushrooms to eat. There are hundreds of great recipes for them. This one is a simple but tasty breakfast dish that I think you will enjoy. If you have any of your own great mushroom recipes that you would like to share with the club online, please email them to me and I would love to give them a try!

Ingredients:
1 Pound Fresh Chanterelles Chopped, (White Chantis will also work)
4- Eggs
1 Tablespoon of Butter
A Pinch of Minced Garlic
1 Tablespoon of Fresh Parsley, Chopped
3 Tablespoons of Chopped Red Onion Or Green Onions
2 Tablespoons of Chopped Green or Yellow Bell Pepper
Salt & Pepper to your liking
Grated Cheese (optional)- I do prefer Cheese added, I use Grated Parmesan or Romano

Wash them gently, removing all dirt and debris. Cut end of stems off as well. Remove any spoiled or questionable mushrooms. If you have some large specimens, slice them into smaller portions.

Place the washed mushrooms in a bowl or on a plate.

Chop Chanterelles, Parsley, Red Onions, Garlic Clove, and Bell Pepper.
If you have one of these, it will be great!

Place all chopped ingredients in a buttered skillet and sauté for 3-4 minutes.

Then stir in eggs, and scramble as you normally would. Also add grated cheese at this time if you like. When nearly complete, add Salt and Pepper to your liking.

Enjoy!
